Quark Waffeln - Yoghurt Waffles

Ever since I bought my little waffle maker ,waffles have become a regular breakfast item at home.They are more or less like pancakes but a lot more easier to make as the waffle iron does most of the job for you.I make them often as this is the easiest way to make my little girl eat eggs.These waffles are a little different from the usual ones as I've replaced half of the all purpose flour with whole wheat flour and the addition of quark makes it more healthier.You could replace the quark with any thick or hung yoghurt like Greek yoghurt.It's the season of cherries here and I couldn't resist clicking them. Aren't they real photogenic ???


Makes 3 ( In a 5-heart shape waffel maker)
You'll Need:
Eggs -2
Melted Butter - 2 tbsp
Milk - 7 -8 tbsp
All Purpose Flour - 3 tbsp
Whole Wheat Flour - 4 tbsp
Sugar - 3 tbsp ( You can also use Brown Sugar)
Quark or Yoghurt - 8 - 9 tbsp

Method:
-Separate the yolk and the white portion of the eggs.Beat the egg whites for a minute until they turn stiff.
-Whisk the Quark,egg yolks,sugar and butter well.
-Add the Flour and the Milk and just whisk until there are no lumps.
-Add the stiff egg whites to the mixture and slowly whisk until they are mixed.
-Heat a waffle iron and grease it with a little oil or butter.
-Pour 1/3 of the batter on the iron and bake.Repeat the process two more times.Done !


Note:
-They are very soft when they are hot in the iron and tend to tear when you take them out,to get the waffles out a big flat ladle works better than a fork.
-Serve them with a little peanut butter spread on top,simply yummy ! :)
-They are not very sweet,increase the amount of sugar if you prefer a sweeter version.

Bombay Toast - Quick Fix

Serves 1
A simple yet delightful bread toast.Some people call it French Toast,but i somehow like the name Bombay toast.I would call this my favorite childhood snack.This was my father's specialty,he was an expert at making this.He would make it so moist and sugary that my sister & I would never feel that we've had enough.It makes a great breakfast and my daughter loves it. I learnt it from my Dad and he in turn from my Grand mom,well guess recipes are like heirlooms that are passed down from generation to generation ;)

Ingredients:
White Bread - 2 slices
Egg - 1
Milk - 4 tbsp
Butter or ghee - 1- 2  tbsp
White sugar or Brown sugar - 3-4 tsp


Method:
-Cut the edges from the Bread.
-Break the egg into a bowl & beat well with a fork.Add the milk & sugar and beat well.
-Heat a pan , when it heats up toast the bread slices for a minute on both the sides.
-Now add the bread slice to the egg mixture and with a fork make small piercings in it so that it gets soaked well in the egg mixture.Remove it & add the next slice and repeat the same thing.
-Add the ghee to a broad pan and when it heats up add the well soaked bread slices.Cook on a low to medium heat until they are well cooked and slightly browned on both the sides,turning them in between.

Masala Dosa with Tiffin Sambar & Coconut Chutney

Serves 3
Masala Dosa,what should I call this,the Queen of South Indian Tiffin perhaps.Before North Indian dishes became popular in our hotels this was the first thing people would always order. The city where we stay in Germany has just one North Indian Restaurant, and I've left with no choice but to prepare South Indian Restaurant delicacies at home.It's long since I've tasted Masala Dosa in Chennai,every time I visit India this would be the first thing on my to-do list.But we would get so caught up with all the other stuff that I'd remember it only when I get back. I've tasted Masala Dosas in Bangalore,they are pretty thick and they have an extra red chutney spread on them before the Potato Masala is spread.But I prefer the crisp thin ones we get in Chennai :)Guess this would be one long post with the Dosa,Chutney,Sambar and the Potato Masala. I love serving this with a thin Moong Dal Sambar,this Sambar doesn't call for any tamarind and tastes yum !It tastes even better when Whole Green gram is used instead of Moong Dal.


Ingredients:

For the Dosa:

Parboiled Rice -3/4 cup
Raw Rice - 1/4 cup
Urad Dal - 1/4 cup
Channa Dhal - 1 tbsp
Toor Dhal - 1 tbsp
Fenugreek - 1/4 tsp
Ghee & oil - To make dosas
For the Potato Masala:
Potatoes :  1/4 Kg - 4 -5 big ones
Onion - 1 big (chopped)
Green Chilli -1(chopped finely)
Ginger - 1 small piece(minced)
Urad Dal - 1/2 tsp
Channa Dhal - 1/2 tsp
Mustard - 1/2 tsp
Hing - 1/2 tsp
Turmeric Powder - 1/4 tsp
oil - 2 tsp
Salt - as needed
Curry leaves  -1 sprig


Method:
For Dosa:
-Clean and Soak all the Ingredients in  water for 4-5 hours.Then grind it finely to a paste adding water if needed.
-Add salt to the batter and beat it well with your hands.Let it ferment over night or for 8 - 10 hours.
Potato Masala:
-Peel the potatoes and cut them into pieces.Pressure cook them for 5 mins on low heat with salt and 1/2 a cup of water.Drain and preserve the water.Mash the potatoes well.
-To a pan add oil,when it heats up add the Mustard,Channa dal and Urad dal.Then add the curry leaves,ginger and hing powder.Add the onion and saute well until slightly browned.Add the turmeric powder,salt and mashed potatoes.Add the water in which the potatoes were boiled and mix well.
-Cook on low flame for 5 mins or until the mixture is dry.
Assembly:
-Pour about 2 tbsp of batter on the dosa pan and spread them to make thin dosa. Drizzle oil & ghee generously around the sides.Cook on low flame.Spread some potato masala on the center,cover and cook for 2-3 minutes.Then remove the cover and gently fold the dosa and remove.
-Can be served with a dollop of Butter on top.

Tiffin Sambar:
Serves 3
Ingredients:
Small onions - 10 -15(peeled and chopped)
Tomato - 1 big (chopped)
Curry leaves - 1 sprig
Mustard - 1 tsp
Fenugreek - 1/4 tsp
Hing - 1/2 tsp
Ghee & oil - 1 tbsp
Coriander Powder - 1.5 tsp
Turmeric Powder - 1/2 tsp
Red Chilli Powder - 3/4 tsp
Coriander leaves - 1 sprig
Moong Dal - 3 tbsp
Drumstick- 1 big(cleaned and chopped into 2"pieces)

Method:
-In a pressure cooker dry roast the Moong Dhal and pressure cook with 1/2 a cup of water,salt and 1 tsp of Sesame oil for 5 minutes.Then add the Drumstick to the Dhal and pressure cook for 1 whistle.Mash the dhal well without mashing the drumsticks.A stab mixer work great for the mashing.
-Add oil&Ghee in a vessel,when they heat up add the mustard ,Fenugreek,Hing and curry leaves.Next add the onions and saute until translucent.
-Add the tomatoes and saute for 2 minutes.Add the coriander powder,red chilli powder and turmeric powder.Mix well and cover and cook on low flame for 5 minutes.
-Add the cooked Dhal and Drumstick mixture and mx well.Add 1/2 a cup of water or more depending on how you like it.Check & add salt.
-Add the coriander leaves and cook on medium flame for 5-7 minutes.

Coconut Chutney:
To be Ground:
Coconut scraping - 1 cup
Dhalia -fried Channa dal - 1.5 tbsp
Green Chilli - 2
Ginger - a small piece
Cashew nuts -2-3
Cumin Seeds - 1/2 tsp
Salt - as needed
Tempering:
oil -1 tsp
Curry leaves - 1 sprig
Mustard & Urad dal - 1tsp

Method:
-Grind all the Ingredients to be ground to a fine paste adding a little water.
-Heat oil in the pan and splutter all the tempering Ingredients.
-Add the tempering to the blender and pulse once along with the coconut mixture.

Broken Wheat Porridge - Bulgur Porridge - Kids recipe

Serves 1 toddler
This is an extremely healthy recipe for Kids.Can be fed to babies right from when they are 6 months old and for toddlers.My little girl was one of those kids who wouldn't eat Cerelac or any kind of standard porridge .After trying every other 'Grießbrei' (something similar to cerelac that we find in Germany) I had to resort to making my own.This was one thing that worked,for at least 3 days in a week :) and it's very easy to prepare.


Ingredients:
Bulgur - 2 tbsp
Dates(seedless) - 2
Raisins - 8 -10
Nuts powder - 1 tsp(I use Almond powder)
Milk - 150 ml - 1 cup
Water - 30 ml

Method:
-To a pressure cooker add all the ingredients and pressure cook for one whistle on high and simmer for 5 minutes.
-Grind to a fine paste with a stab mixer.Add milk if u want to dilute it.

Whole grain apple muffins


These muffins are very healthy .I make them mainly for breakfast for my toddler.They are very quick & easy to make and can be real filling.


 Ingredients :
Makes 4
Whole wheat flour - 75 g
Oats - 75 g
Egg - 1
Brown Sugar - 75 g
Olive oil - 1 tbsp
Whole Milk - 3 - 4  tbsp
Cinnamon powder - 1/2 tsp
Apple - 1/2 a medium one


Method :
-In a bowl add the sugar,flour,oats and cinnamon powder and mix well with a spoon.
-Break the egg into the bowl and mix well.The batter will be very thick.
-To this add the olive oil and milk and mix well.
-Peel,core and grate the apple.Add the grated apples to the batter and mix well.
-Preheat the oven to 175° C.Fill 4 muffin cups fully with the batter and bake for 20 mins.

Spinach,Corn and Carrot Sandwich

Serves 2
This is a very healthy and easy to fix dish.It makes a great breakfast dish or an evening snack.This is more like a family favorite :)


Ingredients :
Bread slices - 4 big
Frozen spinach - 150 g or Palak - 15 leaves
Corn - 100 g
Carrot - 1 medium (finely grated)
Onion - 1 small ( chopped finely)
Ginger - 1 small piece (grated)
Green chili - 1( chopped finely)
Mint leaves- 1 tsp( chopped finely)
Coriander leaves - 1 tsp ( chopped finely)
Cumin powder - 1/4 tsp
Coriander powder - 1/4 tsp
Red Chili powder - 1/ 4 tsp
Turmeric powder - 1/4 tsp
Tomato ketchup - 1 tbsp
Milk - 2 tbsp
Cheese(Grated) - 1 tbsp
Salt - As needed
oil - 1 tsp
Butter or Ghee- 1 tsp


Method:
-If using Palak leaves, add them to boiling water and let them boil for 2 mins. Then drain them out and chop finely or grind.
-Add the oil to a pan , when it gets heated add the ginger,green chili,coriander and mint leaves and saute for a few mins.
-Add the onion and saute until it turns brown.Add the grated carrot and saute for a few min.Now add the corn, spinach, tomato ketchup,salt and the powders.Saute for 2 - 3 mins until well mixed.
-Add the milk, and about 2 tbsp water and cover and cook on low heat for 4 - 5 mins.
-After 5 mins sprinkle the cheese, mix and remove from the stove.
-Apply little butter on all the slices of bread, Spread the corn mixture between two slices of bread and grill in a sandwich maker !

Blueberry Orange muffins

Makes 5
I simply love baking and I find that Orange adds a very unique flavor to anything baked with it.These muffins are not very sweet, but taste very good and make great breakfast muffins.This recipe is from 'Baking from my home to yours'. I don't own the book, and this recipe really makes me wish I had the book :)


Ingredients:
Freshly squeezed orange juice - 30 ml
Orange zest - 1/2 tsp
Egg - 1 big
Honey - 1 and 1/2 tbsp
Butter - 60 g - 1/2 stick - melted and cooled
Sugar -  30 g - 1/6 cup
All purpose Flour - 1 cup - 140 g
Baking powder - 1 and 1/4 tsp
Baking salt - 1/8 tsp
Buttermilk - 90 ml
Salt - 1/8 tsp

Method:
-Whisk Buttermilk,egg,honey,melted butter and orange juice just until combined.
- Grate the skin of about half an orange to get the zest.Add the sugar to the orange zest and mix it well with your fingertips.
-Add the flour,baking powder,salt and baking soda to the sugar mixture and whisk gently.
-Add the orange juice mixture to the flour mixture and fold gently for a few times.The batter will be thick and lumpy.Make sure to not over mix it.
-Fill about 5 muffin cups until they are full.
-Preheat the oven to 400°F/204°C and bake for 20 mins.

Crepe

Serves 6

 I tasted crepe for the first time in Germany.The crepe stalls in markets here are always crowded.Taming my sweet tooth has always been a problem :)and these crepes served hot with Nutella are simply delicious.They can be served as breakfast or an evening snack!


Ingredients:
Eggs - 3
Melted Butter - 3 tbsp
Milk - 1 cup or 250 g(whole milk enhances the taste)
sugar - 1 tbsp
Ghee - 1 tbsp
Flour - 90 g (for a healthier version replace it with 45 g of Wheat flour and 45 g of All purpose flour)
salt - 1 pinch

Method:
-In a blender add the eggs,butter,milk,sugar,flour,salt and blend on high speed until everything is mixed well,approximately 10 seconds.Alternatively you can also beat it with an egg beater.
-Let the batter sit for one hour.
-After an hour just stir it a little and if you feel that it's thick add just a little milk to get it to the pouring consistency.
-Heat a dosa pan and brush it with Ghee,pour about 2 tbsp of the batter and spread it around to make thin dosas. Remove the crepe from the pan once the edges are slightly browned and it's cooked
-Spread the chocolate cream on it as soon as you take it out of the pan or better if you can still keep the crepe in the pan and spread the cream.
